Last week, we talked about one way to minimize food waste. A second way to minimize waste is to use as much of the food as we can. When your food is on the verge of spoiling, consider storing them for future use. Here are my suggestions:
- Fruits: Cut up any fruit that is going bad and put it in freezer storage bags. Use the fruit to make smoothies, fruit desserts, or jams/jellies.
- Vegetables: Cut the vegetables and put in freezer storage bags. Use the vegetables to make a broth for a soup or dice them and add to a soup, spaghetti, lasagna, chili, omelets, etc. You can use parts of fresh vegetables that you normally cut off and throw away in your broth.
- Poultry: If you cooked too much or if you’re tired of eating it, cut it up or shred it! Use it later to add to a soup with vegetable broth or make a salad (g. chicken or turkey salad with mayo, relish, onions, peppers, etc.).
- Milk: Use milk that is spoiling in foods like pancakes or cornbread instead of going out to buy buttermilk.

Instead of trashing food at the first sign of going bad, think again! There are ways to “create” a new dish using old foods. You just have to get creative…or keep up-to-date with my blogs! Shameless plug. If you have questions or want some help, contact me – I’d be glad to work with you!
